In this assignment exploring the Slow Food Presidia, you will research the relationship between an Italian food,
wine, or traditional dish and the locality where it is produced (land, community, history). You will then analyze
whether such ties exist in your life and what the possible advantages or disadvantages of such connections
with local foods.
Pre-essay preparation:

connections between food products and your locality?
Instructions
Step 1: Choose an Italian item to write about from the Slow Food Presidia list (Link:
https://www.fondazioneslowfood.com/en/what-we-do/slow-food-presidia/ ).
When visiting the website, make sure to scroll down and choose “Italy” from the drop down menu. You will be
taken to the list of all Italian items; scroll down to review and select your choice.
You may choose any item, including animals, dishes, etc. from the Presidia as long as you can answer the
questions in Step 3.
Step 2: Research the Italian food, beverage, or traditional dish you selected from the list, which is tied to a
specific territory or region. Note that each presidia item has its own profile on the Presidia site. You are
encouraged to thoroughly read the profile and reach out to the producers listed to get more information. It is
also helpful to research other producers growing/making/raising the same items to get various perspectives.
Note: You need to rely on a minimum of two sources. You can use the course readings and materials as one
source.
Step 3: Write a 750-1000-word essay (excluding citations) that answers the following questions:
Describe the unique characteristics of the item. Include a brief discussion on the nutritional elements of the
item and how it reflects the Mediterranean diet.
Discuss the “terroir”. How is this item tied to the land, community, and history of the locality? Provide specific
examples.
What food product in your life connects you to a specific territory or region like the item you have studied?

Explain and provide examples.
Discuss the advantages and disadvantages of sustaining local or regional identities through agricultural
products and/or cooking practices? Provide specific examples.
How does the mission of Slow Food and the Slow Food Presidia connect to the Mediterranean lifestyle?
Step 4: Document all external sources using an academically accepted citation system such as MLA and APA.
Remember, that you need to use a minimum of two sources for this assignment. Please adhere to writing
conventions such as using providing a title, using double space, paragraphs, proper punctuation, spelling, and
